Based on seasonal produce and Fabian's moods, the menu is conscientious and reveals itself in all its fullness and truth. Our credo: a mile-long menu for boundless pleasure! Chef Fabian Feldmann, always scrupulous about the quality of his produce, regularly visits the small producers of the Basque region: 95% of our produce is sourced within a 150 km radius, and 85% of the products we work with are organically grown.
