SAS La Ferme Salet

Our family-run, mid-mountain farm is surrounded by meadows and groves. The Basco Béarnaise, a local breed of dairy sheep, makes up the entire flock. A hardy breed adapted to the local climate, they produce quality milk, all of which we transform into raw milk farmhouse cheese - summer, spring and winter quality - to be found on the farm in our sales area. Our herd includes some 40 Blonde d'Aquitaine cows.

To respect their well-being, we graze our ewes on rich, abundant grass. In winter, we bring them back to the sheepfold in the evening, where they enjoy and feed on hay and regain produced on the farm. On June 20, the ewes transhume to La Pierre Saint-Martin, at an altitude of 1,800 meters. This limestone area is home to a rich flora that gives the cheese an exceptional taste.
