GAEC Clématite
A couple of landless shepherds who have lived in the Basque country since 2020, we have a flock of locally bred Manech tête rousse dairy ewes reared organically. We transform the milk (organic and PDO) produced by our ewes into farm-made tomme (Anhice Mongelos) from December 15 to May 15. We then transhumance to the Col d'Arthé in Esterençuby (route d'Iraty), where we make mountain tomme until July 15. Our tommes are sold and tasted on site.
