In the heart of the Basque mountains, in the Aldudes valley, the cheese factory was founded in 1993 under the impetus of the local shepherds who had formed an association to face the threat of an industrial cheese factory stopping the collection of sheep's milk
We produce exclusively raw sheep's milk cheeses despite the constraints linked to the transformation of a mixed milk. We can receive the public thanks to its windows that show the rooms, thanks to explanatory panels that trace the elaboration of the cheese from the collection of milk to its maturation. We also evoke the traditional pastoralism with the maintenance of the breeding of the ewe "manech black head".
