Ferme Maitia

Jean-Mixel MAITIA has been processing all the milk of his ewes since his installation in 1992. "I am settled on a small mountain farm in Estérençuby with a flock of black-headed Manex ewes and I practice transhumance on the heights of Iraty. My ewes spend five months on the mountains of Iraty, from 15 May to 20 October, where I make summer cheese. Around the farm, the ewes are fed mainly on pasture, hay and regrowth produced on the farm. I mature the cheeses in the Saloir Collectif d'Uhart-Cize for at least three months."
