Ferme Coussirat

Pierre Coussirat is a young shepherd who wished to establish his sheepfold on his native land in the hills of Monein and Lucq de Béarn, in the heart of the Jurançon AOC

Passionate about the shepherd's trade from a very young age, he trained with experienced shepherds in the Ossau and Aspe valleys, while studying at the Pau-Montardon agricultural college

After having acquired the knowledge necessary for the profession, he started his own farm in 2020.

The farm is made up of a breeding farm of Basco-Bearnaise dairy ewes (a hardy breed from the Pyrenees). The milk produced is then transformed into cheese, matured and sold on the spot.
