A new restaurant to be opened in June 2021 in the centre of Biarritz.

The cuisine is contemporary and highlights the products of the Basque Country. Sillon is a place anchored in its territory and in its time. It is through a strong link to the products, to the producers, through a reading of the times and its environmental issues that the menus are created on a daily basis.
