Every Monday morning from 10:30 %E0 to 12:00, spend some time with one of the three shepherdesses on the Irati-Cize plateau, who graze their flocks on the local pastures. They’ll show you how to milk the sheep (in season), how cheese is aged, how to care for the sheep, and how the sheep graze on the grass. Cheese tasting included. Reservations required. Maximum 20 people.
