Here, Basque gastronomy is in the spotlight, with Xabi basing his home cooking on quality, authentic products from small producers in the valley. As the seasons go by, gourmets will be able to enjoy tasty dishes such as beef axoa with Espelette chilli, wild boar stew, pigeon salmis, "Potée" with Banca trout, "Manech" mutton cassoulet, "Kintoa" Basque pork ham, not forgetting the traditional ardi gasna with its Itxassou jam.
