In Ossau-Iraty PDO country, this hike will introduce you to the Manex tête noire or rousse, a mountain breed of sheep (Distance: 9.3 km, ascent: +300 m). Once you've arrived at the cayolar d'estive, Pauline, the shepherdess, will show you around the cheese-making room and drying room. Taste her cheese before setting off on your return journey.

Bring hiking boots, poles, water, snack and windbreaker.
