The Patxamama restaurant in the Grand Bayonne district is the place to discover, led by chef Nicolas Bouchard and his partner Lise. Nicolas trained in Paris, passing through the Ferrandi school, the Dutournier house, opening one of Guy Martin's restaurants, holding several positions at Le Meurice for 2 years, then 3 years with Yannick Alléno before giving it all up to travel around Latin America... and it was there that he found the inspiration for his Patxamama restaurant. It goes without saying that South America has had a major influence on his cuisine. A bistro-style cuisine with a travel influence. Nicolas works with fresh local produce, and attaches great importance to selecting his producers.
