In 1660, at the wedding of Louis XIV in Saint-Jean-de-Luz, the King?s mother and the Infanta of Spain, Marie-Thérèse, succumbed to the delicacy of Monsieur Adam?s macaroons, thus initiating the renown of a house that has endured for over three centuries.
Almonds, sugar, egg whites? We won't reveal any more about this delicious delicacy, as the secret of its manufacture has been closely guarded by the Adam family for?13 generations. Whenever possible, products are sourced locally. All stages of production are carried out in the Basque Country to guarantee inimitable quality and taste.
Andoni and Miguel Telleria-Adam continue to develop the business they inherited from their father Jean-Pierre, upholding tradition while innovating in the demanding craft of pastry, confectionery and chocolate-making.
